EVOO is so associated with breakfast toast that we sometimes forget everything it can do for our daily cooking. In reality, a good extra virgin olive oil is much more than just "a drizzle" in the morning: it's the base for sauces, the star of marinades, an ally for baking, and the finishing touch that turns an ordinary dish into something special.
