Grilled vegetables

Verduras a la parrilla

Today we suggest a grilled vegetable salad, for which we will need the following ingredients:

1 eggplant

1 large onion

2 bell peppers (you can use different colors)

1 zucchini

Extra virgin olive oil (EVOO) to taste

The steps to follow are:

Preheat the oven to 180°C while you cut the vegetables into thick slices. Place them on a baking tray and drizzle with a little extra virgin olive oil (EVOO). Roast the vegetables for about 15 minutes, or until soft and golden. Now all that's left is to serve, you can do it as a hot or cold salad, depending on your preferences.
