Meatballs are a very traditional dish in Spanish gastronomy, and at Ad-Morum, we present a recipe for preparing them during this season.
Ingredients for the meatballs
500g ground meat (beef or pork)
1 egg
1/2 cup breadcrumbs
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
Salt and pepper to taste
For the Sauce
1 can (400g) crushed tomatoes
1 onion, chopped
2 cloves garlic, minced
1 carrot
3 tablespoons Picual extra virgin olive oil
Salt, sugar, and pepper to taste
Instructions for the meatballs
In a bowl, mix the ground meat with the egg, breadcrumbs, garlic, parsley, salt, and pepper. Form the mixture into meatballs of your desired size. Then, in a frying pan, heat two tablespoons of Picual extra virgin olive oil and cook the meatballs until they are browned on all sides. The meatballs will still be raw inside; we are just looking for them to be browned on the outside initially. Remove to a plate and start the sauce.
For the sauce
In the same pan, add 1 tablespoon of Picual olive oil and sauté the onion, garlic, and carrot until tender. Add the crushed tomatoes and cook over low heat for 15 to 20 minutes.
Season with salt, sugar, and pepper to your taste. Finally, add the meatballs to the sauce and simmer them for about twenty minutes.
The juiciness that this oil will add to the classic meatball recipe will make all the difference. Moreover, it will be a healthier version that you shouldn't miss.
Tips: To achieve a more intense sauce, you can blend the onion, garlic, and carrot once cooked and return them to the pan to continue cooking.
