February 28th is not just a date on the calendar. It is the day when Andalusia looks in the mirror, recognizes itself, and celebrates. And in that image of identity, there is something that is never missing: a piece of bread, a drizzle of extra virgin olive oil, and our unique way of understanding life.
At Ad-Morum, we feel that our early harvest Picual EVOO is part of that story. We are a family connected to the olive groves of Jaén, to the cold dawns of the harvest season, and to that intense green luster that only freshly made good oil has. On Andalusia Day, EVOO is not just an ingredient: it is a symbol of origin, land, and shared culture.
Andalusia, a land painted with olive trees
Andalusia is today one of the world's great olive oil capitals. The region concentrates most of Spain's olive oil production, and provinces like Jaén lead the national ranking year after year, with volumes that position it as an absolute benchmark inside and outside the country.
When one travels through the region from Sierra Morena to the Mediterranean, it is easy to understand why. The Mediterranean climate, with many hours of sunshine, mild winters, and long summers, along with soils steeped in agricultural history, offer perfect conditions for the olive tree. Upon this infinite landscape, our daily work rises: transforming this fruit into an extra virgin olive oil that preserves every nuance of its origin.
For us, talking about Jaén olive oil is talking about roots. Each harvest is the continuation of a story written generation after generation, in which growers care for their farms as a legacy that must not be lost.

February 28th: a day to remember who we are
Andalusia Day was born as a celebration of the autonomy and will of a people who decided to take control of their future at the end of the 20th century. But beyond the historical and political context, February 28th has become a day of simple gestures: flags on balconies, streets full of life, and, in many schools, the classic "molinero" breakfast of bread and oil.
That gesture, so commonplace, perfectly summarizes what EVOO represents for this land. It is not a luxury product reserved for special occasions. It is the everyday fat, the one that accompanies breakfast, daily stews, and light dinners after an intense day. It is edible culture.
At Ad-Morum, it moves us to know that when someone opens one of our bottles on this day, they are putting something on the table that speaks of Andalusia as strongly as an anthem or a flag.
Jaén and Ad-Morum: an origin that defines character
Jaén is recognized as "the world capital of olive oil." Not only for volume, but also for its growing commitment to quality, traceability, and product care.
Within this landscape, our project is rooted in a specific territory and a very particular way of understanding Jaén olive oil:
PGI Aceite de Jaén: a seal that speaks of origin
The Protected Geographical Indication (PGI) Aceite de Jaén protects extra virgin olive oil produced and packaged in the province, under strict quality and traceability criteria. It is the first PGI for extra virgin olive oil recognized in Spain and represents a European guarantee that certifies the link between the product and its territory.
This seal guarantees, among other things:
- That the oil comes from olives harvested in the 97 municipalities of the province.
- That very demanding sensory and physico-chemical parameters are met.
- That there is rigorous control over the origin and journey of the product, from the field to the bottle.
When we produce an early harvest Picual EVOO under this umbrella, we are not just producing an excellent oil. We are signing, along with the farmers, a commitment to transparency and respect for the territory.
Our early harvest Picual EVOO: identity in liquid form
The early harvest Picual EVOO we produce at Ad-Morum comes from green olives harvested in the early stages of the season. This delicate and brief moment is key to obtaining an extra virgin olive oil of enormous aromatic intensity, high polyphenol content, and a marked personality: elegant bitterness, persistent piquancy, notes of fresh grass, tomato, or green almond.
Behind each bottle are many decisions: when to enter the farm, how to organize the harvest, how quickly to bring the fruit to the mill, at what temperature to perform the extraction. All this is not seen, but it is felt when the oil drips onto the bread and fills the kitchen with aroma.
EVOO as a symbol of origin on the Andalusian table
Much more than "bread with oil"
In Andalusia, extra virgin olive oil is present from the very beginning of the day. Breakfast with bread, EVOO, and sometimes a little tomato, is not a recent trend. It is a custom that connects generations and today is part of the imagery of Andalusia Day, especially in schools and educational centers.
But EVOO goes far beyond toast:
- It is the base of sofritos that add depth to stews and potages.
- It is the finishing touch that crowns a salmorejo, a vegetable cream, or grilled fish.
- It is the silent protagonist of salads, marinades, and dressings that, without it, simply wouldn't have the same soul.
Each of these uses reflects a way of cooking and understanding food that is closely linked to the Mediterranean diet, a dietary pattern recognized for its health benefits and in which extra virgin olive oil plays a central role.
Health, culture, and future
Numerous scientific studies have shown that regular consumption of extra virgin olive oil is associated with a lower cardiovascular risk, largely thanks to its richness in oleic acid and polyphenols, and its ability to improve cholesterol profiles and reduce oxidative stress.
For us, who produce Jaén olive oil, this scientific evidence reinforces something that has always been known here: EVOO is not just flavor, it is also well-being, prevention, and quality of life. And doing it well, with respect for the environment and for those who work the olive grove, is betting on a more sustainable future for Andalusia.

How to celebrate Andalusia Day with Ad-Morum EVOO
You don't need a complicated menu for Picual EVOO to be the star of your February 28th. Sometimes, simple gestures are the best way to tell a story.
Simple ideas to fill your table with origin
Andalusian breakfast with character
Good country bread, slowly toasted, a generous drizzle of our early harvest Picual EVOO and a pinch of salt. If you want to go a step further, add grated tomato or a few thin slices of ham. It's a humble breakfast, but it contains all the essence of who we are.
Vegetables and creams with a “finishing touch”
Pumpkin, leek, or asparagus creams, served in small cups, gain personality when finished with a drizzle of raw extra virgin olive oil. That final touch adds shine, aroma, and a silky texture that transforms a simple dish into something special.
Cheese board and EVOO to share
A selection of Andalusian cheeses, nuts, some crusty bread, and several small glasses with our Picual EVOOs. Tasting the oil alone, on bread, or combined with cheese allows you to appreciate different nuances and turns the appetizer into a small tasting at home.
EVOO and territory: every drop counts
The Jaén olive oil is not a product isolated from its environment. Behind each campaign there are families, cooperatives, oil mills, and entire towns that live connected to the olive grove.
At Ad-Morum, we feel that when someone chooses our Picual EVOO, they are doing much more than buying good oil:
- They are supporting a way of life linked to the Andalusian countryside.
- They are betting on projects that prioritize quality, traceability, and the environment.
- They are keeping alive a landscape that defines the image of Andalusia in the world.
That is why Andalusia Day is also a day to thank those who make it possible for the oil to reach your table: the growers who wake up early, the teams who work at the oil mill, and all the people who trust in our project.
EVOO as Andalusia's liquid flag
When we think of symbols of Andalusia Day, the green and white flag, the anthem, and crowded squares come to mind. But, if we look closely, there is another element that is repeated in almost every home: a bottle of extra virgin olive oil ready to accompany whatever is shared that day.
For us, that is the best summary of what our work means. Jaén olive oil, crafted with care, respect, and commitment, is a way to bring Andalusia to every table.
At Ad-Morum, we will continue to put all our effort into each campaign so that, when you open a new bottle of Picual EVOO, you feel that you are not just enjoying a great oil, but a piece of Andalusian origin, history, and future. 💚🫒
