How to use EVOO in your daily cooking (beyond toast)

Jan 28, 2026

EVOO is so associated with breakfast toast that we sometimes forget everything it can do for our daily cooking. In reality, a good extra virgin olive oil is much more than just "a drizzle" in the morning: it's the base for sauces, the star of marinades, an ally for baking, and the finishing touch that turns an ordinary dish into something special. At Ad-Morum, we believe that if you have a quality early harvest Picual EVOO at home, half your cooking is already sorted. You just need to know how to use it beyond toast… and that's exactly what we're going to tell you. Why EVOO should be your main fat in the kitchen Extra virgin olive oil not only adds flavor: It contains monounsaturated fats (like oleic acid), beneficial for the heart; It provides antioxidants and polyphenols, which help protect against oxidative stress; It tolerates high temperatures very well for sautéing and baking, with a smoke point that, depending on the quality, can be around 180–200 °C, making it suitable for cooking without fear. If you add the character of an early harvest Picual EVOO like ours—green, aromatic, with hints of fresh grass and an elegant peppery finish—you'll understand why we insist so much that you use it not only for breakfast, but in all your daily cooking. Using EVOO raw: the finishing touch that changes everything Using it raw is the most direct way to enjoy all the nuances of EVOO: Quick dressings: salads, seasoned tomatoes, vegetable or fish carpaccios… A good EVOO, a pinch of salt, something citrusy (lemon or orange), and a fresh herb, and you have a simple yet professional-level vinaigrette. Finishing dishes: a drizzle of extra virgin olive oil at the end over a vegetable cream, mashed potatoes, hummus, or steamed fish adds shine, aroma, and an extra layer of flavor. Healthy snacks: carrot sticks, cucumber, or sourdough bread dipped in EVOO with a little salt and pepper. As simple as that. In short: if a dish tastes "bland," before you complicate things, try finishing it with a teaspoon of Picual EVOO. Often, the magic is right there. Using hot EVOO: sautéing, baking, and confiting Some still believe that EVOO is "only for raw use." Nothing could be further from the truth. A good extra virgin olive oil: Withstands sautéing and baking temperatures well if not overheated; Retains a good part of its healthy compounds in techniques like sautéing; Adds flavor where other oils go completely unnoticed. Some ideas for your daily life: Sauté vegetables (zucchini, peppers, asparagus, mushrooms) with EVOO and herbs. Bake vegetables, potatoes, or white fish with a generous drizzle of EVOO. Make gentle confits (cherry tomatoes, garlic, baby carrots) at low temperature to have on hand in the fridge. Our early harvest Picual EVOO shines especially in these preparations: its green and fruity character doesn't disappear when cooked, but rather integrates into the dish. EVOO and emulsions: when the sauce is everything One of the most interesting aspects of EVOO is its ability to emulsify, meaning to combine ingredients that wouldn't naturally mix well (like water and fat) and turn them into a creamy and stable sauce. With our EVOO, you can prepare, for example: Ccreamy vinaigrette for pasta or legume salads; Hhomemade light mayonnaise (with pasteurized egg) flavored with lemon or garlic; Eemulsified dressing for rice bowls, couscous, or quinoa. Due to its texture and stability, EVOO makes these sauces silky, full-bodied, and packed with flavor, even using very few ingredients. 4 simple ideas for using Ad-Morum EVOO in your daily cooking Let's get practical. Here are four very easy recipes, designed for getting back into routine, for Sunday batch cooking, or for any day when you want to eat well without overcomplicating things. 1. Baked mushrooms with garlic and Ad-Morum EVOO 🥄 A quick side dish that practically cooks itself. Place clean mushrooms on a baking sheet. Add sliced garlic, a pinch of salt, pepper, and a generous amount of Ad-Morum EVOO on top. Bake at medium-high temperature until golden and tender. The result: juicy mushrooms, with an intense garlic aroma and the fruity depth of Picual EVOO, perfect to accompany meats, fish… or to eat with just bread. View this post on Instagram A post shared by Aceites Ad-Morum (@aceitesadmorum)   2. Roasted potatoes with rosemary and Ad-Morum EVOO 🥔🌿 An absolute classic of daily cooking, but when you use a quality extra virgin olive oil, it transforms into a restaurant-quality side dish. Imagine potatoes: crispy on the outside and very tender on the inside, fragrant with fresh rosemary, and finished with a good drizzle of our early harvest Picual EVOO, which adds freshness, green notes, and a very balanced peppery kick. They are ideal for accompanying meats, fish, eggs, or vegetables… though we warn you: more than once, you'll end up eating them on their own, straight from the pan. They are simple, homemade, and demonstrate that flavor is, literally, in the details. 3. Quick pasta with sautéed vegetables and Ad-Morum EVOO 🍝 A complete dish ready in the time it takes for pasta to cook. Cook your favorite short pasta. Meanwhile, in a pan with Ad-Morum EVOO, sauté strips of zucchini, bell pepper, onion, and a few cherry tomatoes. Mix the pasta with the vegetables, add a little more extra virgin olive oil raw, a pinch of salt, pepper, and, if you like, some grated cheese. In less than 20 minutes, you have a colorful dish, with carbs, vegetables, and the healthy fats from EVOO, perfect for tomorrow's lunchbox. 4. Chicken marinated in Ad-Morum EVOO for the whole week 🍗 A very practical batch cooking idea: In a bowl, mix Ad-Morum EVOO, lemon juice, minced garlic, oregano or thyme, salt, and pepper. Add diced chicken breast or thighs and marinate in the fridge (at least 30 minutes, longer is better). Cook on the grill or in the oven. The result is juicy, aromatic, and flavorful chicken, perfect for: adding to salads, filling wraps or sandwiches, accompanying your roasted potatoes with rosemary, or storing in the fridge to have your week's protein ready. Here, EVOO acts as a marinade, adds flavor, helps prevent the chicken from drying out, and seals in all the aromas during cooking. Quick tips to integrate EVOO into your daily life Finally, some easy habits that make your extra virgin olive oil go from an "occasional ingredient" to a daily staple: Always keep a bottle of Ad-Morum EVOO handy near the stove and another on the table. If you see it, you'll use it. Swap highly processed sauces for homemade dressings with EVOO, lemon or vinegar, and spices. Replace other less beneficial fats with Picual EVOO in stir-fries, stews, and baked dishes. Harness its aromatic power: with few ingredients and good oil, you can prepare simple but character-filled dishes.

Cooking techniques with EVOO

Nov 27, 2025

To cook well with olive oil, it's not enough to just know how to "drizzle a bit on top." This ingredient is much more versatile than it seems and can be used both raw and heated, employing different techniques depending on the dish you want to prepare. If you know these techniques and when to use each one, you will not only improve the flavor of your recipes but also get the maximum nutritional benefit from your liquid gold. In this guide, we'll show you, in a simple way, how to use olive oil like a professional. Why cook with olive oil? Before getting into the details, a quick note: extra virgin olive oil (EVOO) is rich in oleic acid, antioxidants, and polyphenols, which makes it one of the most interesting fats in the Mediterranean diet, both raw and heated. Furthermore, EVOO has good thermal stability, with a smoke point that, depending on the variety and quality, usually ranges between 180 and 210 °C, making it perfectly suitable for sautéing, baking, and even frying if the temperature is well controlled. How to use olive oil raw Olive oil is a key ingredient for cold preparations, where its aromas and nuances are best appreciated. Here are some of the most common techniques. 1. Dressing Dressing is one of the simplest and most powerful ways to use raw olive oil. It involves combining EVOO with other ingredients such as salt, vinegar or lemon, spices, and aromatic herbs to enhance the flavor of vegetables, legumes, and even pasta dishes. It's the star technique in salads, but it also works great in: grilled vegetables, cold pastas, legume or rice salads, toast with tomato or avocado. A good dressing can turn a simple salad into a perfect dish. 2. Preserving Olive oil has traditionally been used as a natural preserving medium. The technique involves fully submerging the food in oil, limiting contact with air and extending its shelf life. It's very common for: cured or semi-cured cheeses, cooked meat loins, cured meats, vegetables (peppers, sun-dried tomatoes, artichokes, etc.), canned fish (anchovies, tuna, boquerones). In addition to protecting the food, the olive oil absorbs some of its aroma and flavor... and then you can reuse it for dressing or other preparations. 3. Emulsifying Emulsifying is combining two ingredients that, in principle, would not mix well (the classic water + fat) until a homogeneous mixture, denser and with a new texture, is obtained. EVOO is ideal for this because, in addition to adding body, it provides flavor and aroma: Examples of classic emulsions: mayonnaise, aioli, salmorejo, ajoblanco, creamy vinaigrettes. In these preparations, the oil not only binds the sauce: it completely defines the character of the dish. 4. Marinating and macerating Another way to use raw olive oil is to marinate or macerate foods: they are mixed with EVOO, spices, herbs, garlic, citrus, vinegar, or soy sauce and left to rest for a while to absorb the aromas. It's often used with: white meats, fish, tofu, vegetables for roasting or sautéing. The oil acts as a vehicle for the flavors and helps to slightly soften the texture, especially in meats and fish. 5. Smoking and finishing with a drizzle of EVOO Smoking itself is done with smoke from selected woods, but olive oil comes into play at the last moment. After smoking the food (meat, fish, cheese, vegetables...), it's very common to finish the dish with a generous drizzle of raw EVOO. This allows us to: highlight the nuances of the smoking, add shine and juiciness, add the healthy and aromatic benefits of extra virgin olive oil. Hot cooking techniques with olive oil Olive oil isn't just for salads. Used correctly, it's an excellent fat for hot cooking thanks to its stability and its ability to enhance flavors. 1. Sautéing and stir-frying Sautéing and stir-frying are quick techniques in which food is cooked with a small amount of oil over medium or medium-high heat: Sautéing: often the first step in stews, rice dishes, or sauces (onion, garlic, vegetables). Stir-frying: quick cooking, constantly moving the food (vegetables, chicken, pasta or rice stir-fries). In both cases, EVOO works very well: it withstands moderate temperatures well, it adds flavor without masking the food, it helps develop aromas and lightly brown the food. 2. Frying Yes, you can fry with olive oil, and not only can you: it's one of the most interesting options if the temperature is controlled. EVOO has a smoke point that usually ranges between 180 and 210 °C, which makes it perfectly suitable for frying, as long as it's not burned or excessively reused. It is more stable than other vegetable oils thanks to its antioxidants and polyphenols, and generates fewer undesirable compounds if used correctly. Basic tips: heat the oil, but if it starts to smoke, lower the heat or change the oil; avoid mixing different oils; do not reuse it too many times; drain the food well on absorbent paper. 3. Confit at low temperature Confit is cooking food at low temperature (approx. 60–90 °C) submerged in fat, in this case, olive oil. It's not the same as frying: frying involves high temperature and quick cooking; confit involves gentle and prolonged cooking. It is used for: fish (hake, cod), vegetables (garlic, peppers, potatoes), tender meats. The result is very juicy, flavorful, and delicate foods, which have absorbed part of the oil's aroma but without toasting or drying out. 4. Roasting and baking with olive oil Olive oil is also key in: roasts of meat and fish, roasted vegetables, baking (cakes with oil instead of butter). In roasts and vegetables: EVOO helps distribute heat, prevents food from drying out, promotes the formation of a golden and flavorful crust. In baking, using olive oil (mild or with a fruity profile, depending on the desired result) provides: a very moist texture, better cake preservation, a healthier fat profile than other solid fats. 5. Stewing, braising, and pickling In traditional Spanish cuisine, olive oil is the base for many stews, braises, and pickles: onions, garlic, vegetables, or meat are first sautéed in EVOO, then liquid is added (wine, broth, water, vinegar in the case of pickling) and cooked over low heat. Here, the oil plays a dual role: it is the initial flavor base, where the aromas of the sofrito develop, and also part of the final sauce, providing unctuousness and a well-rounded flavor to the dish. Final tips for getting the most out of olive oil To finish, some simple tips: Use raw EVOO whenever you want to enhance the aroma: salads, toasts, dressings, finished dishes. For hot techniques (sautéing, baking, stewing), you can also use EVOO without a problem if you control the heat. Avoid bringing the oil to its smoke point: if you see smoke, lower the temperature or change the oil. Store the oil in a cool, dark, and well-sealed place to protect it from light, heat, and air, which accelerate oxidation. Always choose quality oils with a clear origin and, if possible, from recent harvests. Cooking with olive oil goes far beyond "frying with a drizzle." Dressing, preserving, emulsifying, sautéing, confiting, or finishing a dish with EVOO are techniques that can transform your daily cooking. Once you put them into practice, olive oil stops being just another ingredient and becomes one of the great stars of your table 🫒✨

This recognition is also a tribute to the efforts of our harvesters, the commitment of our oil mill, and the value of Jaén Olive Oil. We want to tell you what it means and how we got here. Being present in this guide with a prominent score means being in an elite catalog, where only the most exceptional oils have a place. For us, entering with 86/100 is a clear affirmation: our early harvest Picual EVOO meets the world's most demanding standards.   1. Focus on raw material: early harvest green olives Since the beginning of our history, we have been committed to early harvest. This raw material, cared for from the tree to the oil mill, is the basis of our distinguished EVOO. That character, that vibrancy that our oil transmits in every drop, is radically different from normal oils. It is part of why we deserved the score in Flos Olei. 2. Technique and respect for the process: cold extraction and rigorous control A high-end EVOO is not achieved by chance. In our oil mill, we apply: Cold extraction, which preserves aroma, color, and nutrients, Precise temperature and time controls, Rigorous batch selection, Total traceability at every step. All of this allows our product to maintain its identity, and this is a decisive factor for expert tasters of guides like Flos Olei. 3. Flavor, aroma, and sensory characteristics that make a difference To achieve 86/100, an oil must stand out in multiple ways. In our case: Intense and fruity aroma, with herbaceous, almond, and fresh olive notes, Balanced flavor: harmonious bitterness, elegant pungency, and persistent aftertaste, Lively and penetrating texture: that "shine" in the mouth that conveys quality. These attributes are what make Ad Morum's Picual EVOO an outstanding oil among international tasters. 4. Local identity: the value of Jaén olive oil Our origin is an essential part of our strength. Located in Jaén, a land of infinite olive groves, we are part of a tradition whose prestige lies in every drop. An oil certified as Jaén Olive Oil carries the weight of a recognized designation and a centuries-old agricultural history. This identity component was key for Flos Olei to value our proposal. Practical tips for parents 👪 Make double portions and store them in lunchboxes for the week. Pack sauces and dressings in 100 ml bottles (dark if glass) to take with you and dress just before eating. The true origin of our oil

Jun 13, 2025

At Ad-Morum, our Jaén olive oil is not just a product: it is a living heritage, a story that dates back centuries and that we proudly share today. From Navas de San Juan, in the heart of Jaén, we carefully cultivate our Picual EVOO, blending tradition, innovation, and deep respect for our land. 🌿 The origin of the term "oil": beyond Arabic It is common to associate the word "oil" with Arabic culture due to its sound. However, its etymology is deeper and more diverse. The word comes from Hispano-Arabic azzáyt, derived from classical Arabic az-zayt, meaning "olive juice". In turn, it has roots in the Aramaic zaytā, which also refers to the olive tree. This linguistic journey reflects the rich history of olive oil in the Mediterranean basin, where diverse cultures have contributed to its development and refinement. 🏡 Navas de San Juan: birthplace of our oil Navas de San Juan, our home, is a municipality located in the El Condado region, in the province of Jaén. With an area of 8,505 hectares of olive groves, it is one of the most prominent areas in the production of high-quality olive oil in Spain. The history of Navas de San Juan is deeply linked to olive cultivation and oil production. Since ancient times, its inhabitants have dedicated their lives to this noble craft, passing down from generation to generation the knowledge and passion for Jaén olive oil. 🛡️ Ad-Morum: a name with history The name "Ad-Morum" is a tribute to our town and its coat of arms. It comes from the Apollonian vessels, where the inscription "Ad-Morum" was reflected. It is said that these vessels were taken in Roman times from Cadiz to Rome, passing through an area called Ad-Morum, which corresponds to present-day Navas de San Juan, via the Vía Augusta. This name symbolizes our connection to history and tradition, and represents our commitment to the quality and authenticity of the Picual EVOO we produce. 🌱 Tradition and innovation: the soul of Ad-Morum At Ad-Morum, we combine ancestral wisdom with the most advanced techniques to offer an excellent Jaén olive oil. Our family business, part of the Acolsa group, is characterized by an innovative mindset and a strong commitment to our productive environment: Andalusia, the European region with the largest agricultural area dedicated to olive trees. Each campaign, we select the best Picual variety olives, harvested at their optimal point of ripeness, to produce our Picual EVOO. This careful process guarantees an oil with an intense flavor, fruity notes, and a high content of natural antioxidants. 🛒 Discover our oils In our online store, you will find two types of oil that reflect our dedication and passion: Early Harvest EVOO: made with green olives harvested at the beginning of the season, it offers a fresh and fruity flavor. Benefits of filtered oil versus unfiltered oil

May 28, 2025

At Ad Morum, a family business integrated into the Acolsa group, we have been passionately dedicated for generations to the production of Jaén olive oil. Our mission is to offer a Picual EVOO of the highest quality, respecting traditions and embracing innovation. Therefore, we choose to offer exclusively filtered oil, thus guaranteeing a stable, long-lasting product with all its properties intact. 1. Greater stability and durability 🛡️ The filtering process removes impurities such as micro-particles of pulp and vegetable water which, if left in the oil, can accelerate its oxidation and deterioration. By removing these impurities, filtered oil maintains its organoleptic and nutritional properties for longer, ensuring a longer product shelf life. 2. Preservation of antioxidants and polyphenols 💚 Contrary to what might be thought, filtering does not remove the beneficial compounds from the oil. Polyphenols and antioxidants, responsible for many of the healthy properties of Picual EVOO, remain intact during the filtering process. This way, a healthy and beneficial oil for the consumer is guaranteed. 3. Clean taste and defined sensory profile 👃🍈 Filtering contributes to a cleaner and more defined taste in the oil. By removing impurities, the appearance of unwanted flavors that can develop over time in unfiltered oils is avoided. This allows Jaén olive oil to preserve its characteristic sensory profile, with fresh and balanced notes. 4. Versatility in the kitchen 🍳 Filtered oil is ideal for a wide variety of culinary uses. Its stability and clean taste make it perfect for both raw preparations and high-temperature cooking. From dressing salads to frying, Ad Morum's filtered Picual EVOO is a versatile ally in the kitchen. 5. Commitment to quality and tradition 🌿 At Ad Morum, we deeply value tradition and the know-how passed down from generation to generation. Our decision to offer exclusively filtered oil responds to our commitment to quality, sustainability, and consumer satisfaction. Each bottle of our Jaén olive oil reflects this commitment and our dedication to offering the best from our land. Olive oil and oxidation: How does shelf life affect its flavor and properties?

Apr 14, 2025

At Ad Morum, we consider extra virgin olive oil (EVOO) to be an essential pillar of our gastronomy and culture. However, it is crucial to understand how the passage of time and oxidation can affect its flavor and properties. In this article, we will explore how expiration affects EVOO and what measures we can take to preserve its quality. Does EVOO have an expiration date? EVOO does not have a strict expiration date; instead, a best-before date is indicated. This means that, although the oil can be consumed after this date without health risks, it is likely to have lost some of its organoleptic characteristics and nutritional benefits. Oxidation: the main challenge for EVOO Oxidation is a natural process that occurs when EVOO comes into contact with oxygen, light, and heat. This phenomenon causes the degradation of the beneficial compounds in the oil, negatively affecting its flavor and nutritional value. Consequences of oxidation in EVOO EVOO that has undergone oxidation may exhibit: Alteration in flavor and aroma: Development of rancid or vinegary notes that distort its original sensory profile. Loss of healthy properties: Decrease in antioxidants and other beneficial compounds for health. Change in color: Darkening of the oil, indicating possible degradation. Recommendations for preserving EVOO quality To keep EVOO in optimal condition, we suggest: Proper storage: Store the oil in a cool, dark place, away from heat sources and direct light. Use of appropriate containers: Prefer dark glass, stainless steel, or ceramic bottles that protect the oil from light. Airtight sealing: Ensure the container is tightly closed to minimize exposure to oxygen. Conscious consumption: Purchase quantities that can be consumed within a reasonable period, avoiding storing oil for prolonged periods. Conclusion At Ad Morum, we deeply value the quality and authenticity of EVOO. Although it does not expire in the traditional sense, oxidation can diminish its qualities. By adopting proper storage practices and being aware of the factors that influence its degradation, we can fully enjoy this "liquid gold" and maximize its benefits in our daily diet.

Why is correct oil labeling important?

Feb 5, 2025

Extra virgin olive oil is one of the most appreciated products in global gastronomy. Its quality, flavor, and health benefits make it an essential ingredient in gourmet cooking. However, to ensure that the consumer receives a quality product, it is fundamental that the labeling is clear, precise, and complies with current regulations. At Ad Morum, our philosophy is based on respect for tradition and a commitment to excellence. Generation after generation, our growers have preserved an olive-growing heritage that is part of our identity. We ensure that our oils meet the most demanding standards, always offering a transparent and quality product. 1. Guarantee of quality and authenticity The labeling of extra virgin olive oil is the primary source of information for consumers. A well-detailed label allows consumers to know the product's quality, origin, and the characteristics that differentiate it from other oils. In our online store Ad Morum, we guarantee that each package reflects the purity and authenticity of our Picual EVOO. 2. Origin and traceability: the key to trust The origin of the oil is a determining factor in its quality and flavor. The exact origin of the olives must appear on the label, allowing consumers to know the product's traceability. At Ad Morum, we are committed to transparency and highlight the Andalusian origin of our oil, ensuring that each bottle comes from selected harvests with the highest quality standards. You can learn more about our history and tradition here. 3. Information on the olive variety Not all oils are the same, and the olive variety plays a fundamental role in their flavor and properties. The label must specify the variety used, in our case, the exquisite Picual EVOO, one of the most appreciated varieties for its intense flavor, balanced bitterness, and great stability. Our extra virgin olive oil stands out for its green notes and high content of natural antioxidants, making it the perfect choice for gourmet cooking. 4. Harvest date and oil freshness A key aspect of labeling is the harvest date, as it directly influences the oil's freshness. The more recent the harvest, the better it will preserve its organoleptic and nutritional properties. At Ad Morum, we clearly indicate the harvest campaign on our packaging, ensuring that our customers enjoy a product that is always fresh and of high quality. 5. Nutritional labeling: health benefits The labeling must also include information on the nutritional values of the oil, allowing consumers to know its health benefits. Picual EVOO is rich in oleic acid and antioxidants, promoting cardiovascular health and offering anti-inflammatory properties. Our commitment to health and well-being leads us to offer a product that is not only delicious but also beneficial for the body. Clear labeling for an informed choice Proper labeling of extra virgin olive oil is essential to guarantee its quality, authenticity, and freshness.
